I started mixing spaghetti squash in with my spaghetti noodles. To this day, no one has noticed because I put the sauce on before they get their plate, so they never see them. It is a great source of veggies because the sauce counts, too.
When you cook ground beef for sloppy joes, put some diced green peppers and carrots in with it. It is more nutricious and it tastes great.
I make fries out of sweet potatoes. They taste really sweet and the kids love them.

The trick is to puree the veggies in a blender! Then no one will notice them.
Everyone likes spaghetti, right? Try this: Fry some ground beef, drain the fat, and put aside.
In another pan, sautee some garlic and onions. Put in blender.
Then grate a couple of (raw) carrots, add to blender.
Add chopped up zucchini to blender.
Add a couple of raw tomatoes to blender (take out seeds, which make them taste a little bitter when pureed)
Add a red bell pepper to blender.
Turn on blender to get all ingredients into a yucky-looking, unrecognizable mixture.
Add the mixture to the ground beef, add a can of your favorite pasta sauce, your favorite spices, a bit of salt, and a couple bay leaves, and cook for a while until it tastes ready. And presto! Your favorite spaghetti sauce with secret ingredients no one will even notice.

Why not making your own recipe?
Mix fruits and vegetables and apply some side dishes on it. Make it look tasty and it will certainly excite the family.

I would try a stir fry, then it would have veggies, meat, noodles/rice, and (depending on what you use) fruits. It can be a very nutritious meal with all of the food groups included.

How old are they?
tell them no dessert unless they have a little bit of each vegie
they may like raw veggies better... beans
cabbage shredded with grated carrot & light mayo
brocholli
tomato
lettuce
sweet potato is nice raw
baby spinich
even corn if its real young but they still may like it cooked because i think kids like corn
my son hated cooked vegies when younger but he liked the ones that had to be cooked

You can melt their favorate cheeses on any veg, my fav is broccolli. Best to melt in oven not microwave. Most dishes with any meat, rice, pasta, soups, stews, gumbos these types you can cook in any veg and tastes good. Im guessing you cook your veg separate and serve on the side. Make sure your veg is seasoned. If that dosnt work try v8 juice.

cover them in melted cheese. American cheese melts great.
Also you can try starving them before dinner and offer them carrot sticks or some other veggie to snack on until dinner is done. That way they eat that and they have to because dinner isn't ready yet.

You should try Indian recipes. Indians are known to use vegetables extensively. you can try searching on the net. there are many mouth watering dishes you can prepare.

steam baby or sliced carrots
toss in butter
stir in a couple of tablespoons of orange marmalade
