Put a whole chicken (or pieces) in a large pot, fill the pot up with water and boil it for one hour. After one hour pull the chicken out, place it on a dish, take a ladle and scoop out the slimey stuff floating on top of the water and put it in the trash. Then pull the chicken off the bone, and place it back into the pot, then cut up:
Carrots
Celery
Onions
Potatoes
Zuccini Squash
Then season it with:
4 Bay Leaves
Lemon Pepper (Mccormick)
Thyme
Salt
Then boil all the contents in the pot until the carrots and the potatoes are soft enough.

When I make chickensoup I put in a blend of Italian herbs like oregano, basil, thyme, and rosemary, I also add poultry seasoning, minced garlic and a few chicken boulion cubes. I start by heating up what ever pot I'm going to use with 2 TBS of olive oil, I add 1 cup of diced onions, and one cup of celery, I let it sweat NOT sautee there is a difference. ( you don't want it to brown ) after about 5 minutes of sweating the veggies I add about 4 to 5 cups of water depending on what size pot you use. I cube up the chicken I use you can use a whole chicken. After the chicken is added go ahead and add carrots and red potatoes or other veggies of you like and let it simmer until the chicken comes apart. I make this about 2 times a month in the cold Ohio winters and no one in my family has complained yet. Good luck

Egg Drop Soup
4 cups chicken broth or stock
2 eggs, lightly beaten
1 - 2 green onions, minced
1/4 teaspoon white pepper
Salt to taste
A few drops of sesame oil (optional)
In a wok or saucepan, bring the 4 cups of chicken broth to a boil. Add the white pepper and salt, and the sesame oil if using. Cook for about another minute.
Very slowly pour in the eggs in a steady stream. To make shreds, stir the egg rapidly in a clockwise direction for one minute. To make thin streams or ribbons, gently stir the eggs in a clockwise direction until they form. Garnish with green onion and serve.
You could add 1/2 cup frozen peas or fresh grated ginger.

Throw some thawed, diced chicken in a crock pot half filled with water with some onion soup mix, and egg noodles. Let it cook on high for about 2 hours, cut it down to low until it's all the way cooked and it is one of the best things you ever put in your mouth.

I make an Italian chicken soup with of course all the usual stuff - chicken, carrots, celery, noodles, s&p, garlic - but I also add oregano, egg drops at the last minute and sprinkle parmesan cheese on top before serving. With some good toasty french bread - nothing can beat it!

this gives you an opportunity to play. are you starting from scratch-using Campbell's? what? if starting from scratch make a big batch and take a little and add different things. I like just plain chicken noodle with Ms. Dash and salt and a grilled cheese sandwich.

I use two different shaped pastas, chicken boullion, black pepper and tomato paste. Tomato paste??!! Yep, just enough to change the color from the blah golden to an amber. To kick it up a notch, I also add a bit of tabasco.
