will adding different brands and types of wine like Cabernet with sangria make me sick, like mixing different spirits together, say gin with whisky or vodka and tequila?

The only reasons not to are taste and sanity. In formal dinners, there's a real art to pairing different wines with different courses, and at the same time starting with lighter or friendlier wines and progressing to the heavy hitters, and still leaving a place for a dessert wine. After five or six courses well put together, you're stuffed, sloshed and satisfied.

yes. It's called blending.

Gin and whiskey is just gross. Your talking about corn and Juniper berries.

Wine is grapes. You just need to figure out what you like and go for it. Try a dry red with something fruity like a sparkling white. You'll get pink.
