my son and i are in a x-mas baking mood... any good and easy recipes for fudge/white fudge or other deserts?? he is 3 and loves to bake and watch things bake. i think that making fudge or something BESIDES COOKIES would be a fun experience for him.

This easy fudge is made with cream cheese and white chocolate chips and chocolate chips.

* 1 package (8 ounces) cream cheese, soft
* 6 cups confectioners' sugar
* 1 1/2 tsp. vanilla
* 1 package (12 ounces) white chocolate chips
* 1 ounce (1 square) semisweet baking chocolate
* 2 teaspoon shortening
* 3/4 cup chopped pecans, reserve extra pecan halves for garnish


In a large mixing bowl beat cream cheese, sugar and vanilla until smooth . Melt white chocolate chips in microwave on LOW until smooth, stirring occasionally. Fold into cream cheese mixture with chopped pecans.Spread into a greased 8 inch baking dish. Chill until ready to frost. Melt baking chocolate with shortening in microwave on LOW (about 2 minutes). Pour over top of fudge and spread to cover. Garnish with reserved pecan halves. Cool, then cut into squares.

The best fudge recipe is on the back of Jet Puff marshmallow creme called Fantasy Fudge. Takes less than 10 mins from start to finish.

I agree - the "Fantasty Fudge" recipe on the back of the marshmallow cream jar is by far the easiest and best fudge recipe. I've tried ALOT of different fudge recipes over the years and that one consistently comes out perfect every time.

chocolate fudge Ingredients 2 3/4 cups sugar 4 ounces unsweetened chocolate 3 tablespoons butter, plus more for greasing pan 1 cup half-and-half 1 tablespoon corn syrup 1 tablespoon vanilla extract 1 cup chopped, roasted nuts, optional Directions Grease an 8 by 8-inch pan with butter. In a heavy-bottomed saucepan, combine the sugar, chocolate, 1 1/2 tablespoons of the butter, half-and-half, and corn syrup. Over medium heat, stir with a wooden spoon until sugar is dissolved and chocolate is melted. Increase heat and bring to a boil. Reduce heat to medium-low, cover, and boil for 3 minutes. Remove the cover and attach a candy thermometer to the pot. Cook until the thermometer reads 234 degrees F. Remove from the heat and add the remaining butter. Do not stir. Let the mixture cool for 10 minutes or until it drops to 130 degrees F. Add vanilla and nuts, if desired, and mix until well-blended and the shiny texture becomes matte. Pour into the prepared pan. Let sit in cool dry area until firm. Cut into 1-inch pieces and store in an airtight container for up to a week.

Here is one of the easiest peanutbutter fudge recipes I have found.
1 cup butter
1 cup Peanutbutter
1 tsp vanilla
1 lb powdered sugar
In a microwave safe bowl add pb and butter. cover with plastic wrap poke holes in so steam can escape. heat 2 min, remove and stir replace plastic and cook again on high for 2 min. remove from microwave and add sugar and vanilla. stir to combine. Pour into a greased 8x8 pan. cool in the fridge until set. cut into 1 in peices and enjoy.

QUICK AND EASY CHOCOLATE FUDGE

12 oz. semi-sweet chocolate chips
11 1/2 oz. milk chocolate chips
14 oz. condensed milk
Nuts, optional

Combine ingredients in a nonstick saucepan; cook over medium heat until chocolate is melted. Pour into 8 x 8 inch foil pan; spread evenly. Chill thoroughly; cut into squares. Makes 64 (1 inch) squares.

Campfire Fudge

1 c Nestle Semi-Sweet chococlate chips
2/3 c sweetened condensed milk
1/2 c granola cereal
Directions
In large saucepan, combine chocolate chips and sweetened condensed milk. Melt over low heat, stirring constantly, until chocolate chips melt and mixture is smooth. Remove from heat. Pour into foil-lined 8" square pan. Sprinkle top with granola cereal. Let stand until firm (about 1 hour). Cut into 1" squares.

yesterday someone told me that she makes a simple fudge with her son. i have no idea if it works or not, i've never tried it. she said she takes a container of vanilla frosting and empties it into a bowl along with peanut butter. she then said she microwaves it together for three minutes, takes it out and mixes it, then pours it into a nonstick pan to settle. sounds to me like it would work, and the kids could stand right beside you at the counter on their chairs and stools through the whole thing!

EZ Fudge

1 (12 oz) bag chocolate chips
1 (16 oz) tub chocolate frosting
1 tsp salt
1 tsp vanilla

Microwave chocolate chips 1-2 minutes or until melted. In same bowl, stir in frosting, salt, and vanilla. Mix together until it loses its glossiness, pour into greased pan, let cool, cut into squares.

Cream cheese or vanilla frosting also works if making multiple recipes, subbing one or two of the chocolate frosting for another flavor.
