What order are they lit? and why?

a white one, three purple ones, and a pink one.
the pink one is lit 3rd, and should have been lit last sunday.

the white one is lit on christmas.

The traditional is three purple (1st, 2nd, 4th Sundays) and one pink (3rd Sunday). You can also use blue instead of purple.
