ALL?! There's probably over hundered of them. Here's some true Muay Thai fighter, not some huge farang fight under Muay Thai rule:

Thai:
-Buakaw Parmuk- Very famous fighter, was #4 in Lumpinee Stadium before fight in K-1 Max. First Thai to win K-1 Max Grand Prix and first man to win K-1 Max grand prix twice. Very friendly and approachable guy, very humble guy. Great guy overall, never heard anything bad about him.

-Samkor Kietamop- Another very famous fighter, probably a legendary. Known for his extremely powerful kicks. Won KOMA Grand Prix.

-Kaoklai Kannesoring- not very good in Thai, but very successful and highly respected international fighter. Have beaten and knock out many heavy weight fighters. His natural weight is only 165 or 170 lbs.

-Sakmongkol (dont know his last name) he fought and totally beat Ramon Dekker when he was only 18. He also fought many other big name fighters such as Orono and win. Also even when he's way past his peak, he still manage to beat some of the best fighters such as John Wayne Parr.

-Samart Payakaroon- Famous fighter, once considered to be one of the best Muay Thai fighter by the Thais. What's more amazing is he's known to be very lazy about training and pay more attention to partying and clubbing than training. Yet he manage to win titles many time. He retired not too long ago and become a pop singer and movie actor. Many say Buakaw fight very similar to Samart. What's scary is they say Buakaw isn't even half as good as Samart. That should tell you how good Samart is.

-Anuwat Kawwsamrit- Currently 126 lbs Rajadeem or Lumpine stadium champion. He was once considered as unfit for fighting and was a servant at the muay thai camp until he start training and knocked people out. He's known for his powerful hands.

-Sangtie "Deadly Kisser" Noi- A great Muay Thai fighter who started when he was 13 not because of poverty, but because he was passion about it. He faced many tough fighters such as Ramon Dekker, Sakmonkol, and others. He's currently a trainer. He train John Wayne Parr, Yamoto "Kid", and other farangs.

-Seanchai- not the best or legend yet, but getting there. I believe he have a fight with Anuwat in few months.

Farang:

Ramon Dekker- very famous dutch fighter. First one to truly fight like a Thai. Also I believe he's first farang to reach very high level and fight some of the best such as Sakmongkol, Deadly Kisser, Orono, Coban, etc...

Fraid Villaume- Not a well known farang, but very famous. He fight under Muay Thai rule a lot against other Thai. He toss around many tough fighter include Orono who gave Ramon Dekker hard time.

Charlie Skarwoski- A French fighter. He has lived in Thailand and a Thai wife for long time. He was close to fight for title in Lumpinee stadium few time, but haven't happened yet.

John Wayne Parr- A very famous Australia fighter. He lived in Thailand for four years from 19 to 23. He was very close to fight for Lumpinee stadium title, but lose a fight due to cut. Currently run a gym in Australia and train under Sakmongkol who is his favoirte fighter. Very nice guy, easy to approach.

Now for the most famous legendary highly skilled Muay Thai fighter of all time, it would have to be Apidej Sit Hirun. He fought in 1960's and early 1970's. He's known for his extremely powerful kick that even to this day the power isn't matched yet. Those who fight him regularly came out with broken ribs, femur, or arms. He once broken both of his opponent's arm with single kick. You gotta to look him up, if I try to type more about him, I would basically degrade him. He's too big name for me to describe him in a single paragraph.

Hope I answer your question.
