so glad you asked. My girlfriend cooks the best chops (I 'm a guy in case you were wondering-gotta change the avatar) step 1. brown the chops on both sides, season however you like. 2. then cover them with water-just enough so that they are Just covered. simmer away until the water is almost gone and add more water repeat this until they are so tender you can cut them with a fork.
keep in mind you are not boiling the chops but simmering them.
also you can spice up the water if you like. this method works well for the boned chops also. you can use either a regular skillet
or an electric one. OH yeah one more thing-keep the chops covered while simmering. This method has never failed, even with thicker chops

Take eggs, a little milk and your favorite seasoning and whip it up in a deep dish, then in another dish pour in corn flake crumbs, dip the chops in the egg then the flakes, put in frig for at least an hour or two, then drop in hot oil and cook! Serve with potato, a veggie and chunky apple sauce on the side! (chunky apple sauce and pork chops go together great!)

Season the chops and put them in casserole dish. Pour a can of cream of mushroom soup over them and a little bit of water. Cover the dish with a lid and bake them in the oven for 40-45 minutes on 350 degrees. You can also put a few veggies in there like carrots, potato, and bell pepper........very tasty.

This is NOT a "low-fat" recipe, but I've gotten raves.
Flour them on both sides, then fry in vegetable oil sprinkling generously with Lawry's seasoned salt. When chops are nice and brown, place in oven to keep warm while you fry some sliced potatoes in the same oil as you fried the chops-again sprinkling with Lawry's and also black pepper. Serve with applesauce.

Brining them is always good. Here's the trick. this is not China or Yugoslavia. You should and can leave the pork a little pink in the middle. You will not get Trichonosis from undercooked pork at the grocery store.

If you are anything like me, I hate dry food, dry meat, etc.. I used to hate pork chops because they are always dry, till I found this recipe, oh my god, you have to try it !!! It takes a little work but so worth it. Be generous with the broth,and make extra gravy. You will love it!
I got it off Allrecipes.com, enjoy.
Pleasant Pork Chops
INGREDIENTS
* 6 pork chops
* salt and pepper to taste
* 3 tablespoons butter
* 1 onion, chopped
* 1 clove garlic, minced
* 3/4 cup chicken broth
* 1 bay leaf
* 1 cup sour cream
* 2 teaspoons paprika
DIRECTIONS
1. Saute onion and garlic in hot butter. Remove from skillet. Trim excess fat from chops and sprinkle with salt and pepper. Brown chops in skillet; pour off fat.
2. Lower heat, add bay leaf and chicken broth. Cook covered over low heat for 1 hour. Transfer chops to a serving plate, but keep them hot.
3. Heat juices in skillet and reduce to half. Add the sour cream, onion-garlic mixture and paprika, blending thoroughly. Heat through, but don't boil. Pour over pork chops and serve.
I tried mine over white rice, but my girfriend used mashed potatoes, you can also use noodles.
