Best "Easy" cookie recipes I've ever used. I love having fresh cookies all year long but really hate having to spend hours baking. I've tried all kinds of recipes but the ones below are the best I have ever found.
I have traveled with all of these cookies in the past. Usually in a car for several hours but I think they would travel through the air just as well. Just be sure to put them in a plastic tin or something so they dont get dried out or crushed.
Easy Cookies
Sooo easy! This cookie is very malleable, and can be tailored to your families tastes. Try peanut butter, oatmeal, raisins, or chocolate chips as additions
INGREDIENTS
1 (18.25 ounce) package vanilla flavored cake mix
2 egg yolks
1 cup butter
1 teaspoon vanilla extract
1/3 cup granulated sugar for decoration
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Beat egg yolks and margarine together until well blended. Stir in vanilla. Gradually add cake mix while beating with an electric mixer. Mixture should be stiff. If it is sticky to the touch, refrigerate for 20 minutes.
Form teaspoonfuls of the dough into balls, and roll in sugar. Place on ungreased cookie sheets.
Bake at 350 degrees F (175 degrees C) for 11 minutes for soft cookies, and for 13 minutes for crispy cookies.
Easy Oatmeal Cookies
INGREDIENTS
1 cup raisins
1/2 cup hot water
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2 cups quick cooking oats
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1 cup packed brown sugar
1/2 cup chopped walnuts
2 eggs
3/4 cup vegetable oil
1 teaspoon vanilla extract
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Soak raisins in hot water and set aside.
In large bowl, sift flour with soda, salt and spices. Blend in rolled oats, sugar and nuts. In a separate bowl, beat eggs with fork and add oil, vanilla, and raisins and water mixture. Pour into dry ingredients, stirring until well mixed. Drop by teaspoonfuls about two inches apart onto ungreased cookie sheets.
Bake 10 to 13 minutes in the preheated oven, until the edges are golden.
Easy Chocolate Butterscotch Cookies
INGREDIENTS
1 (18.25 ounce) package chocolate cake mix
1/2 cup vegetable oil
2 eggs
2 cups butterscotch chips
DIRECTIONS
Preheat oven to 350 degrees F.
Combine cake mix, oil and eggs in a large bowl. Add butterscsotch chips and mix well.
Drop dough by tablespoonfuls onto ungreased cookie sheets.
Bake for 8 to 10 minutes until the center is just set. Let stand 2 minutes.
Remove to wire rack to cool completely.
Pecan Clouds
INGREDIENTS
2 egg whites
1 teaspoon vanilla extract
3/4 cup packed light brown sugar
2 cups pecan halves
DIRECTIONS
Preheat oven to 250 degrees F (120 degrees C). Lightly grease a cookie sheet.
In a large glass or metal mixing bowl, beat egg whites to soft peaks. Gradually add sugar, continuing to beat until whites form stiff peaks. Stir in vanilla and pecans. Drop mounded spoonfuls onto the prepared cookie sheet.
Bake 1 hour in the preheated oven. Turn off heat, and allow to remain in oven at least another 30 minutes, or until the centers of cookies are dry.
Lil' Devils
Anyone who loves chocolate and peanut butter together will want to make these easy treats!
INGREDIENTS
1 (18.25 ounce) package devil's food cake mix
1/2 cup butter, melted
1/2 cup creamy peanut butter
1 (7 ounce) jar marshmallow creme
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
In a medium bowl, mix together cake mix and butter. Set aside 1 1/2 cups of the mixture, and press remainder into the bottom of an ungreased 9x13 inch baking pan. In a medium bowl, stir together peanut butter and marshmallow creme; spread over the crust in the pan. Crumble remaining cake mix mixture over top.
Bake 20 minutes in the preheated oven. Cool, and cut into squares to serve.

Chocolate Yummer Cookies
1/2 cup (113 grams) unsalted butter, room temperature
1/2 cup (110 grams) light brown sugar
1/4 cup (50 grams) white granulated sugar
1 large egg
1 teaspoon pure vanilla extract
1 cup all purpose flour
1/4 cup cocoa powder
1/2 teaspoon baking soda
1/8 teaspoon salt
1 1/2 cups (260 grams) white chocolate chips
1/2 cup nuts if you want
Preheat oven to 350 degrees F (177 degrees C) and place rack in center of oven. Line two baking sheets with parchment paper.
In the bowl of your electric mixer (or with a hand mixer), cream the butter and sugars until light and fluffy (2-3 minutes). Add the egg and vanilla extract and beat until incorporated. First sift together the cocoa powder, flour, baking soda, and salt and then add to the butter and egg mixture. Mix just until incorporated. Fold in the the chocolate chips.
Using a small ice cream scoop or two spoons, place about 1 1/2 tablespoons of batter on the prepared baking sheet, spacing about 2 inches (5 cm) apart.
Bake for approximately 8 minutes or until the the cookies are still soft in the center but are firm around the edges. Remove from oven and let cookies cool on baking sheet for about 5 minutes before removing the cookies to a wire rack to cool completely.
Makes about 24 - 3 inch round cookies.

DOLLY PARTON'S CHRISTMAS SUGAR COOKIES
1 c Sugar
3 c Sifted flour
1 1/2 ts Grated lemon rind
2 c Butter, softened
2 lg Egg yolks
Cream sugar and butter in a medium-size bowl. Beat in eggs, then flour and lemon peel. Knead gently together. Don't overwork the dough, but make sure it's consistent. Chill dough for 3 hours. Preheat oven to 350'F. Roll out dough with rolling pin. Cut into shapes and place on greased cookie sheets. Bake until tops get pinkish-brown, about 8 minutes. Makes 2 to doz. cookies, depending on size.
I've also found that if you roll them into logs and cut them about a 1/2" thick they do just fine. You can also keep them refridgerated for some time prior to baking.
Another tip is to use sprinkles or push your thumb into the middle and add some jam just to change it up a bit.

Chocolate chip cookies always go over well, and if you pack them tightly into a plastic container so that they don't slide around once you get the lid on, they should travel pretty well. I would not put them into your checked bags, but take them on the plane in your carry-on. Another good cookie is oatmeal raisin, possibly not quite as popular as choc. chip, but maybe a little sturdier for travel. I bake 12-15 dozen cookies every Christmas as gifts, and I always make both the choc. chip and also gingersnaps, which would also travel well. The choc. chip recipe on the chip package is fine, not very complicated. I will also admit that when in a hurry, I use the refrigerated choc. chip cookie dough available in rolls at the supermarket. Makes excellent cookies and couldn't be simpler! And this year they also have gingersnap cookie dough, which the connoisseurs at our house said was almost as good as scratch. However, if you want to make them from scratch, here are 2 recipes from Cooks.com:
NESTLE TOLL HOUSE CHOCOLATE CHIP
COOKIES
1-3/4 c. all purpose flour
3/4 tsp. baking soda
1 measuring tsp. salt
1 c. butter, softened
3/4 c. sugar
3/4 c. firmly packed brown sugar
1 measuring tsp. vanilla extract
2 eggs
1 (12 oz.) pkg. Nestle Toll House semi sweet chocolate morsels
1 c. chopped nuts
Preheat oven to 375 degrees. In small bowl, combine flour, baking soda and salt; set aside. in large bowl combine butter, sugar, brown sugar and vanilla extract; beat until creamy. Beat in eggs. Gradually add flour mixture. Stir in Nestle Toll House semi sweet chocolate morsels and nuts. Drop by level measuring tablespoonfuls onto ungreased cookie sheets. Bake at 375 degrees for 9 to 11 minutes.
Makes: about 5 dozen, 2-1/4 inch cookies.
OLD FASHIONED GINGERSNAPS
1-1/2 cups shortening
2 cups sugar
2 eggs
1/2 cup molasses
4 cups flour, sifted
2 tsp. baking soda
2 tsp. cinnamon
2 tsp. clove, ground
2 tsp. ginger
Cream shortening and sugar; beat in eggs, then add molasses. Add sifted ingredients to shortening and mix well. Roll mixture into 1" balls. Roll balls in granulated sugar.
Place on slightly greased cookie sheet 2" apart and bake at 375 degrees for 12 to 15 minutes. Cool slightly before removing from cookie sheet.
Yield: 5 dozen.

CHEWY CHRISTMAS COOKIES
1/2 c. butter
1 c. brown sugar
1 egg
2 c. sifted flour
2 tsp. baking powder
1 tsp. vanilla
Cream butter, sugar and egg. Add rest of ingredients. Chill 1/2 hour. Roll out thin and bake just until edges are brown. Oven 350 degrees for about 6 to 10 minutes.
