The walnuts are about 7 years old and have been stored in plastic containers in my kitchen cupboard. The taste is off, obviously, but my biggest concern is getting sick if I eat them.

Save your stomach and taste buds! Feed them to the squirrels and birds and buy yourself some fresh ones. If you buy a lot, store them in your freezer. That will keep them fresh and they are delicious right out of the freezer!

The shelf life of walnuts is about a year, not 7! Throw the old nuts out and start with fresh. I doubt that the old nuts that you have eaten will make you ill. The taste must have been pretty bad, though. If you have squirrels in the area, you could leave the nuts for them. I'm sure that they eat nuts that are over a year or one season old.

Guidelines for nuts: frozen = I year; refrigerator = 6 months; dark pantry = 3 months. Best thing to do is take a Sharpie and write the date on the container when you placed it wherever you decided to store. I just ate some questionable pecans and I think it made me sick. It's just not worth it; it CAN BE fatal. If you want to, you can go right ahead. I think it may give you is a upset stomach and a bad aftertaste in your mouth, that might linger for some time.

i would imagine eating anything described as "rancid" would not be a good idea.
