Turkeys are usually sold as Tom turkeys (16-24 lb. each) or Hen turkeys (8-16 lb. each). Turkeys smaller than 8 lbers used to be sold as Beltsville turkeys. Today, all turkeys are tender and the size of the turkey you should buy would be determined by how many servings you are planning. Sometimes the big turkeys can be difficult to handle, especially if you don't have a large pan.
