"U.S. Senate Bean Soup" - 8 servings

1 cup dry pea (navy) beans
1 ham bone with meat
2 medium onions; finely chopped
2 cups chopped celery
2 medium potatoes; mashed (1 1/4 cups)
1 clove garlic; minced
1 tbsp. chopped parsley
Salt
Generous dash pepper

1) Soak beans in 4 cups water overnight; drain.
2) About 3 hours before serving: In 4-quart saucepan over high heat, heat beans, bone and 6 cups water to boiling. Reduce heat to low; cover and simmer 1 1/2 hours or until beans are tender.
3) Add remaining ingredients; simmer, uncovered, over low heat 30 minutes or until flavors are blended.
4) Remove bone; cool until easy to handle. Cut meat from bone; discard bone. Cut meat into bite-size pieces; return to soup. Simmer, uncovered, until desired consistency. Yields 8 cups.
(TIP: Soak beans the quick way - Add beans to boiling water, allowing 4 cups water for each cup dry beans. Over high heat, heat to boiling; boil 2 minutes. Remove from heat; cover and let stand 1 hour. Drain and prepare as above.)

6 cups water
1 ham hock or ham bone
1 lb dry beans (any kind)
soak beans overnight
Drain beans
fill a dutch over (large pot) wtih 6 cups water, bring to a boil, add 1 bay leaf and beans (drained) simmer till tender.
Add chopped onion if you like.
