I need to dip truffles in melted Baker's squares, but how do I melt them? Can I just put them in a pan or do I need to melt butter with them? That sort of thing. Thanks.

There are chocolate coatings made especially for dipping candies in .Before those were available (back in the stone age) I always added a small amount of parafin into the chocolate chips.

To melt the chocolate it is best to melt the chocolate in a double boiler or in a microwave for about 30 seconds and stir until you have melted it.

Put a metal bowl over a pot of simmering water. Do not have the water touch the bottom of the pan. Heat slowly and stir until no bits of chocolate remain unmelted. If the recipe has butter to be melted, melt them together.

it is best if you melt it in a double boiler, (a pan that fits inside a pan) over hot not boiling water. Make sure that you do not get any water into the chocolate or it will be ruined.
