The symbolic value is that it is old. A man at arms would never get down on both knees short of the church or his bedroom. It is too vulnerable a position. Bended knee is offering your service, and that is what a gentleman does when he asks a lady to marry him. It is chivalry; don't knock it.
In fact, if you really want to have a lovely wedding and a lovely life, get involved in historical reenactments and various medieval faires and such, and court one another in the ancient tradition. You may find there is real magic in it.

The knights would propose on one bended knee because they couldn't bend on the side where their sword was hung. The sword would have dug into the ground or worse.

It's much easier to change your mind and run like hell from a one knee position than a two knee position. I know. I tried it both ways. Took longer to get up and running from on both knees.

It goes back to the old 'white and shinning knight' thing. Knights were knighted on one knee, it showed their devotion and loyalty to their Sire so when you go down on one knee to your ladylove your telling that you'll be loyal and devoted to her forever.

"Bended knee" is a form of a bow, signifying him submitting to her grace when proposing marriage. When making a bow you only bend one knee.
