Apple Cider is a homogenous drink--meaning it must be in the fridge without being opened. Its consistency is thicker--almost cloudy looking and has a slightly different taste.

Apple juice is clear, mosre crisp and can be stored on a shelf if not opened. Also last longer on a shelf. But Apple juice also must be refridgerated after opening.

Apple cider has gone through a fermentation process, giving it its sharp flavor. Apple juice hasn't been fermented.

In some cases, there's also a difference in the filtering process.
