Clarified butter is also called "Ghee". It is the clear yellow liquid at the bottom of the pan when butter is melted. Once the butter is melted, you skim the white foam off the surface of the clear butter and discard it. It's the white foam that burns during cooking. Ghee has a higher smoke point and is therefore better for cooking.
