I have bought a butternut squash to make a puree for my baby, as they are supposed to like it. I've never eaten or cooked with this veg before, and am going to have loads left over. What can I do with it? Can I roast it? How about the skin, do you eat that?

Cut it in half, put butter, brown sugar, nutmeg, and a dash of salt in the middle, and bake at 400 degrees until it's soft. Scoop out with a spoon, and don't eat the skin.

Here's a good recipe for butternut squash soup:

Ingredients
½ butternut squash
½ onion, sliced
1 clove garlic, chopped
2 tbsp olive oil
290ml/10fl oz water, boiling
1 chicken stock cube
1 tbsp Greek yoghurt

Method
1. Peel the butternut squash and remove the seeds.
2. Dice the squash and sauté in the oil with the onion and garlic for 3-4 minutes.
3. Add the water and stock cube and simmer for 10-12 minutes until the squash is tender.
4. Blend the soup in a food blender.
5. Season if needed and serve with a dollop of Greek yoghurt.

Cut it in half lenghtwise and scoop out the seeds. Put it face down on a baking sheet sprayed with Pam and roast for about 45 minutes or so. (until you can easily put a fork in it without much resistance)

Scoop out the "meat" and throw away the skin.

For baby - just puree with a bit of water

For you - a bit of brown sugar or maple syrup is good. Perhaps a touch of cinnamon. Or just butter is great. Don't eat the skin.

Peel it and cut in cubes. Toss with a little oil salt pepper about 3TB of brown sugar and Cinnamon. Bake at 350 till tender.

Or roast in oven then use a spoon to remove meat from skin put in deep pot add chicken broth, cream,butter, and a little nutmeg heat thru sever with a little creme fresh or sour cream and some snip chives.

Just peel it like you would a giant root veg, the skin is very waxy, de-seed it and treat it like you would a spud. It only takes about 10-12 mins to boil.
We also gave our son celeriac, sweet potato, he loved all the different flavours.
We used to bulk buy a load of veg at the beginning of every month, blitz it and freeze it in ice cube trays. Every day he would have a different mix of the veg and he loved it.

yum squash is nice...you can not eat the skin. but yes peel the squash then slice it in half and cut the seeds out then you can put garlic paste and black pepper in the remaining hole...wrap in foil and bake in the oven! Dont judge all squashes by the first one because the sweetness of each squash varies it is just a matter of pot luck!

Boil it in a pan of water along with a house brick , when
cooked throw away the squash , and eat the brick , it will
taste better , good luck .

It's very popular in South Africa. sprinkle some cinnamon over it and roast in the oven until soft. Add some butter just hefore serving. Yummy.
The skin is very good for you if you like it as it can be quite tough.

You can freeze what's left for another use for your baby or a dinner for the family. Just place it in freezer safe containers and make sure it's cooled before putting the lid on them and freezing them.

You MUST peel the skin off.

It can be roasted or mashed like potatoes. Or it can diced up and cooked in stews or bolgnaise sauce.
