For example, they don't seem to be able or willing to follow an argument to its logical conclusion if that conclusion would conflict with their pre-establised beliefs. Same with morality...

Anything that does not support a thought system is seen as an attack on it.

The thought is, If I ignore it maybe it will just go away.

whereas i agree with some of these people that you are generalizing a bit too much, i do know what you mean. the key is "beliefs" and the contradicting of preconceived beliefs. if, for example, you believe it's a sunny day outside. even though you cannot see it, you "know" it's sunny. you approach me in conversation with the idea that it's sunny out. neither of us can see outside. i believe that it's cloudy and foggy and generally stormy and nasty. believe. you believe one, i believe the opposite. then we hear on the radio that a plane went down. i say it was the weather but you say that's impossible because it's nice out. even though i followed the information to a logical conclusion, it was my preconceived beliefs that dictated which way i leaned. does this make sense? so it isn't just the christians, but anyone who uses preconceived beliefs to logically conclude something. now, obviously we cannot just get rid of everything we know to be true before making a decision, and i don't think we need to. but it would be helpful for all who get into these kinds of debates to rely solely on information that they have gathered for themselves and can either demonstrate, or prove. all the while, keeping an open mind, and not pulling shut the curtain of "beliefs."

You've sort of answered the first part of your own question. Anyone with religion has a different guidepost so to speak. So one speaks from that.
You probably have not met a good arguing religious person, there are many who can and do logically follow through arguments to conclusion.
But Christians like myself are encouraged not to argue, for several reasons. Here are a few,
--vanity
---stirs up strife
---usually does not win the opposer over
---pointless
---our actions speak louder than our words
---many have eyes but cannot see, ears but cannot hear
and so on

There is a way that seems right to a man and this way ends in death. If you believe only in the physical then you believe in the corruption that is a part of our present with no idea of the eternal. while this is logical thinking for a man their is more available to you than what you can see in the physical world. If you seek what is physical then that is exactly what you have all these things return to the dust from which they came this is logical to a man and their is no way for any man to show you anything differen't only God can reveal himself to you. There is more than the physical but you will not find it with your physical eyes.

Some do and some don't. There are plenty of stupid, ignorant religious people; and there are plenty of stupid, ignorant non-religious people. There's also a great deal of self-righteousness on both sides. (Just look at the answers above mine!)

People who are both educated and devout can appreciate the truth of scientific discovery; however, they also believe that not everything can be explained by science, and their faith fills the gaps.

If you are denying God then you will not be able to convince one of The True Christian Faith... because we know The Truth... and our Faith is based on fact we know absolutly to be The Truth... now...if you want to debate evolution. or quantum physics. or the number of angles who can dance on the head of a pin... then some might go along with such an exersize... but The Truth of God and The Salvation Message is not a debateable subject.... They are facts.. The Truth...

They begin with an assumption of the existence of a supreme being. Anything following that assumption is bound to rather questionable.

Isaac Newton, I guess, might be one example of your question. He was theologian and a Christian first and his scientific discoveries happened due to his curiosity about how God had created the universe.
