There are three reasons I can think of all of which are important:
1. The surgeon knows a lot of anatomy. He/she knows where all the major blood vessels are and will avoid damaging them. If He has to cut them he will tie them off preventing blood loss.
2. The surgeon will use a laser or cauterizer to cut through the flesh. This burns and seals small blood vessels preventing bleeding.
3. Despite all this a lot of blood is lost during surgery. This is monitored by the anesthetist who will transfuse extra blood into the patient if it is needed. Most invasive surgery requires the transfusion of a few pints of blood.

The answer is coagulation.
In the dermal and fat layers you only have small blood vessels that usually stop any bleeding quite easily once air (oxygen) gets to them. If a main vein, artery or major organ is cut then without fast medical intervention you would bleed to death.

Normally you bleed to death when they strike major veins or an organ. Usually in surgery they cut open the skin. I will also watch for a more complete answer.

The surgeon knows where the main arteries are and does not cut into them. You do loose a small amount of blood the the body recovers it on its own. In the case of loosing too much blood for the body to recover, they give a transfusion.

When they do surgery, they use cautery equipment to seal up the bleeding vessels, it uses electricity and heat. If they do surgery and sever a large vessel, they tie it off, or there are clips that can be put over the vessel. For example, if you have an anuerism, they put a clip over the blood vessel to keep blood from flowing into it.

You're only likely to bleed to death if the mugger hits a major vessel. Skin and small vessels only take little clots to stop them bleeding.

they use a special cutting tool
its is heated so it burns your blood vessels closed
also they go through training so they DO NOT hit a major vein or artery
also they can give you a coagulant so if u do bleed it will clot very fast

Well i assume they know where to cut.
You will only bleed to death is you cut a major artery and they will stay away from them.

Uhm not your armpit, but if you were to cut the artery that is near the armpit, yeah you'd die. The brachial artery is on the upper arm, its a major artery. I think you'd die in a few minutes.

Tangs got it right... they only cut thru the dermal layer, where there are no major veins or arteries located. If they do cut anything big, they cauterize (burn) or tie it shut.
