Cant find what I am looking for on the internet. Thought some one might know how to make good baked carrots..

I watched a cooking show recently I haven't seen before. It was some guy doing a holiday dinner. He put fresh carrots into oven proof skillet into the oven, 375 degrees, for about 30 mins. The skins looked tender so he didn't peel them. Then he took them out of the oven and put them on the stove over medium heat, added butter, brown sugar, and a little nutmeg and cooked them about another 10 mins. until butter and sugar made a nice glaze. They looked wonderful. I've been planning on trying it but I don't have an oven proof skillet yet. Good luck and happy eating.

Oven-Baked Carrots
680g (1lb 8oz) Carrots
225g (8oz) Shallots
1 tbsp Butter
1 Lemon juice only
½ tsp Sugar
Fresh Parsley chopped

Preheat oven to 170°C: 325°F: Gas 3
Scrape the carrots.
If you're using baby ones, leave whole, or cut into even-sized pieces.
Peel the shallots, halve or quarter any large ones.
Grease an ovenproof dish generously with half the butter.
Add the carrots and shallots, lemon juice and sugar.
Dot with the remaining butter.
Cover and bake for about 45 minutes, until tender.
Taste and adjust seasoning.
Garnish with chopped parsley.

This is the most amazing carrot recipe ever! I hope you try it!


CARROT CASSEROLE

4 cups diced carrots, and 2/3 cup white (mild) diced onions
Cook until almost done (about 10 minutes in microwave)
If there is a lot of water in bottom of casserole dish, drain some of it
out. (I use little or no water to cook carrots/onions. I like to leave at
least a little of the liquid in the dish - keeps them a little moister.)

1 cup cubed velveeta cheese
1/2 stick butter, sliced
crumbled Ritz crackers over top

Bake 350 degrees for 45 minutes.
