There are many different styles of competitive kickboxing. But here are the general categories:

-Full Contact Rules allow punches and kicks to strike above the waist.
-International Rules allow the same techniques as FCR, but you may also kick your opponents legs.
-Muay Thai allows punches above the waist, kicks both above and below the waist, elbows and knees to the body, fighting from the clinch, and some limited throwing.
-San Shou is similar to IR and Muay Thai, but you can also use judo and wrestling throws.

Of course, there are other rule variations, and different fight promotions will use their own modifications.

Go to youtube and type in Sakmongkol, Samkor, Samart, Buakaw, or Kaolan. They're some of Muay Thai fighters who are most well respected and known for their Muay Thai techniques.

It looks alot like ballet. Except there's no music, no choreography, and the dancers hit each other.
