I've met people who feel their minister is a prophet or that people they know can hear directly from G-d what He is saying. If this is so, why would it be improper to save up their sayings in a note book and add it to the Bible; or why would you need a record of the prophecies of Jeremiah, if there are prophets of the same caliber instructing you today? (Not an insult question, BTW, a genuine one.)

Good question. I've wondered that myself. Of course I'm not sure that I believe there are prophets today of the same caliber. But I do know that the bible says there is. Some say that when Paul says someday prophesy will no longer exist it means it does not exist now but because of the surrounding verbage I believe that as long as this earth exist. I hope some wise Christian will answer it for my clarity.

The Prophets of old were pointing to the coming of Jesus, warning Israel to turn back to God, or telling of the end times. Jesus has already come, we have Prophets that are warning us to turn back to God, just as the Israelites, and we are right now in the last well into the last day.
We have books that are full of modern day prophesies.
One reason we cannot add them to the Bible is, the Bible is complete and contains everything we can know. Another reason is to avoid false religions like Mormonism, and Islam. Third reason is that there will not be generations to come after us for the prophesies to apply to. The last generation is alive right now, and time is almost up before the return of Jesus.

Muhammad was the LAST prophet of God. Everyone else who preaches God's word are messengers. There is a difference.

i do believe there are many inspired people who perhaps hear from spirit ( not sure about God , how would we know it was from God )
however as i am not Christian ... i would not expect them to be added to the bible for two reasons
most are not Christian
and out of respect to the Christian faith ... they feel that their book should not be added to
