If you are looking for long-term outdoor duty then repainting regularly will be necessary. A PVC coating will be difficult to paint over, and will need stripping off. Is appearance an issue? Galvanised comes grey, so if you want a different colour you will have to buy paint and do the painting when it would be good for several years without painting. Powder coated or enamelled may give you the colour you want to start with, but may be more expensive than galvanised.

To answer your final question, aluminium is strong, light and does not corrode so can be useful for some purposes (often used for outdoor furniture), copper is soft, attractively coloured and also resistant to corrosion (often used for pipes), both are more expensive than steel if you compare the initial outlay, but if you factor in all that repainting...

It depends: do you want to work every some years 3 hours to do the paint job or pay more first and to look at those pipes (PVC) after some years.
