I have the Reynolds Fun Shape Star pans, and want to make the crustless quiche for Christmas morning. However, the recipe they give makes 8, and there will be just my husband and I - I don't think my 3 year old will touch it. I can't just split the recipe, as it calls for 5 eggs. Of course, if anyone knows a good way to use 2.5 eggs, let me know! Thanks for any tips.

Since uncooked quiche is basically raw eggs and raw milk, it is better to cook it and then freeze it. I've done this a lot and it works fine. And, yeah, my husband had that same 2.5 egg problem with cutting a batch of cookies in half -- maybe you could give him your half! Enjoy!

Use the yolk as half an egg. It won't really change the recipe any.

As long as you don't freeze for too many days, it might be best to freeze it cooked, and reheat it. The ingredients in the quiche could settle and it may not cook right. Especially if you use some sort of biscuit dough, premade or homemade.

I would suggest that you halve the recipe, "fudge" a bit and use 3 eggs. In a quiche, this will mean a tad more volume, but it will still 'set' and be just fine.

As for your 3 year old, you might be surprised! A yummy quiche with a bit of cheese is one of my niece's faves!

Oh! And cooked quiche freezes just fine, if you put it on a plate in the freezer, let it get rock-hard, and THEN wrap it for storage!

Well there are different sizes when buying eggs. Here in Ireland we have small, medium and large. Just use two large eggs, that should give you the same effect.
Oh and freeze after cooking.

You should freeze it cooked. You can also use 3 eggs when cutting down your recipe it wont hurt.
