It comes from being insecure. You want to make a good impression and you spend more time thinking about what you think they want to hear and less time thinking about what you want to say. You need to develop an attitude of "Love me , Love my dog" In other words, take me as I am. If you try to be something your not, it is uncomfortable and you can't keep it up forever. If she like that image, then when you become comfortable and become yourself, she may change her mind. Your not the same guy I first hooked up with, you changed. Just be yourself and don't fear rejection. Happiness is not being stuck with someone that should have rejected you. It can be a good thing.

They make you nervous. Like the commercial says, never let then see you sweat. Psyche yourself out and talk to them like you would any girl. Just be friendly. Put yourself in their shoes. would you like a girl that acts nervous, shy, uncertain of herself? You would be turned off. Avoid the embarrassment and just be nice, not pushy! Its all about making a girl feel comfortable with you. They will respond better to you...

I am the same way. We can be friendly and flirty but when the girl we really like comes around we get shy. Sad isn't it? Gotta work on that dude. maybe the girls you feel comfortable with are the best girls to be with ...?

Probably because it's more important to you whether or not you "mess up" your encounter with said girls. You should try and chill out: shyness, however tempting it might be, doesn't achieve anything. The girl you like won't know you like her, you won't feel good and...well, that's enough of a reason, I guess.

Because you're afraid of saying something that will make you look stupid or uncool. Instead you act shy and uninterested and scare them off that way.

your shy because you like them and you dont want to say the wrong thing that will make you look bad so you have no idea what to say so you get shy.

You may not want to scare them away (i.e. you are a very careful person).
If a girl is special to you, more than the ordinary, you like to be extremely careful.
