It makes little sense to pick a language that is not spoken by very many people because then you will not have much opportunity to use it. If you want a hard language to learn to read, but one that is easy to learn to speak you might try one of the Chinese languages like Mandarin or Cantonese - those will at least be useful later in life when China becomes the biggest import/export trade partner of the USA. If you want a very easy language to learn to read and write and is used in medical fields you might learn Latin. If you want a language that is more like English you might try French or German. If you want a language that is very hard for English speaking people to learn as a real challenge you might try Inuktitut or one of the languages of the other First Nations like Cherokee or Mohawk or Hopi or Salish...

Try learning Esperanto (I speak English, Esperanto, Spanish, and German) Esperanto was far easier to learn than any of the others, and it opened the world to me. I've had conversations with people from every continent, and every country, and I only had to learn the easiest language on earth to do so.
You might ask, why is Esperanto easier to learn than any of the other languages? It's because it is a language designed to be easier to learn than any national language. Most of the time spent studying a foreign language is spent learning the irregularities and rule exceptions ("I before E except after C", " 'sheep' is both singular and plural", etc). Esperanto has only 16 gramatical rules, and no exceptions to any of the rules.
And before you ask, yes you can travel with Esperanto. Read this article in Wikipedia about the Esperanto "Pasporta Servo" (Pasport Service)

Spanish is my first language and I got dreadfully bored during spanish class. It was especially no fun correcting the teacher and the book, so my first year of High School, they were offering German, French and Sign Language only (first year school openned). I didn't know deaf people, and I don't like french, so I went with german and stuck with it all through high school.
Depending on the languages your school offers, also think of one that might be fun to learn, and most importantly, that you might go to that country at one point and practice it there!
A good fall back language good for anything you do is Latin. I would have loved to take Latin, had they offered it to me.

It seems that Dutch has this honor. Apparently only 150,000 or so people speak it in the U.S. or about 0.05% of the population.
EDIT: Correction, Kalispel is the least widely spoken language in the U.S. according to the source site.
Good luck finding someone to teach that. ;)
