I recently bought Fleur de Sel and I do not know how to use it especially since I was told that its not used like regular salt.

It is used to finish a dish. It is a natural compliment to fresh raw vegetables and salads. It is almost always used as a garnish just before food is served

Being a former chef and having used Fleur du Sel and Pink Salt from Hawaii, like truffles, truffle oil and balsamic vinegar over 20 years old, it is a finishing product, at the price you paid it would be a shame to waste it on just everyday use.

It is produced by evaporation of the sea water from around Mont St Michele, on the coast of France, it has a touch of grey in it and the taste it more subtle then plain old table salt.

It can be used like any other salt. The taste is different. I use it after I have plated my dish, most cooks use it as a finishing salt. I will also put in a small dish on the table.

finely ground can be used in place of regular salt in any recipe. Yields a cleaner taste than regular salt which contains iodine.

coarse ground can be used to finish a dish when serving at the table.

Is it course ground, or like rock salt?

I use the finer ground like regular salt and in baking, if it is larger crystals I use to season meats, stews, soups, etc to cook with.

Don't know if there is any right or wrong, but this is what I do.

If it is finely ground, you can use it like any other salt. If it is coarser, you can use it in cooking. It is especially good in foods like stew.
