Are you sure you mean celsius? 350 C is 662 F. Not many residential ovens will go that high.

The flash point of most cooking oils -- that is, the point at which they begin to catch fire -- is about 600 F, so the oil will probably begin combustion if you left fries in an oven at 350 C.

If you've simply confused C with F (350 F is a common setting for baking and roasting, achievable by any home oven), then no -- neither French fries nor anything else will catch fire at 350 F, no matter how long you leave them in. They'll just get drier and darker.
