Chili-Chicken
Ingredients:
3 Boneless Skinless Chicken Breasts
1 cup chopped onion
1 medium chopped green pepper
2 cloves minced garlic
2 Tbsp. Vegetable oil
2 cans (14 1/2 oz.) stewed tomatoes
1 can (15 oz.) can pinto beans (drained)
2/3 to 3/4 cup Picante Sauce
1 tsp. Chili powder
1/2 tsp. Salt
Preparation:
Cut chicken into 1" pieces. Cook chicken, onion, green pepper and garlic in oil in Dutch oven until chicken loses pink color. Add remaining ingredients. Simmer 20 minutes, or for thicker sauce simmer 1 hour or longer.
Ladle into bowls, may top with shredded cheddar cheese, green onion slices, diced avocado, sour cream, may add additional Picante Sauce.
Serves: 6-8

White Chicken Chili
Makes 6 servings
2 (16-oz.) cans Great Northern Beans
1 medium onion, finely chopped
3 tablespoons olive oil
1 (4-oz.) can chopped green chilies, drained
3 tablespoons all-purpose flour
2 teaspoons ground cumin
1 (14 1/2-oz.) can chicken broth
1 1/2 cups finely chopped cooked chicken breast
Shredded Monterey Jack cheese (optional)
Sour cream (optional)
Salsa (optional)
In large skillet, cook onion in oil for 4 minutes or until transparent. Add chilies, flour and cumin; cook and stir for 2 minutes. Add beans and chicken broth; bring to a boil. Reduce heat; simmer for 10 minutes or until thickened. Add chicken; cook until hot. Garnish with cheese, sour cream and salsa, if desired.
