Hot Spinach and Artichoke Dip
1 cup thawed, chopped frozen spinach
11/2 cups thawed, chopped frozen artichoke hearts
6 ounces cream cheese
1/4 cup sour cream
1/4 cup mayonnaise
1/3 cup grated Parmesan
1/2 teaspoon red pepper flakes
1/4 teaspoon salt
1/4 teaspoon garlic powder
Boil spinach and artichokes in 1 cup of water until tender and drain. Discard liquid. Heat cream cheese in microwave for 1 minute or until hot and soft. Stir in rest of ingredients and serve hot.
Hot Artichoke and Spinach-Crab Dip
1/2 cup crab cake mixture, see recipe below
1 (14-ounce) can artichoke hearts, drained and chopped
1 (10-ounce) package frozen chopped spinach, thawed and well drained
1 cup lowfat sour cream
2 tablespoons chopped fresh parsley leaves
1 teaspoon salt-free garlic and herb seasoning
1/2 cup grated Parmesan , divided
2 pita pockets, cut into wedges
Assorted vegetables (baby carrots, sliced zucchini, celery stalks)
Preheat oven to 400 degrees F.
In a medium bowl, combine crab cake mixture, artichoke hearts, spinach, sour cream, parsley, seasoning, and 1/4 cup of the Parmesan. Mix well.
Transfer mixture to a shallow baking dish and top with remaining parmesan cheese.
Bake 10 to 12 minutes, until dip is hot and cheese is golden.
Serve dip with pita wedges and vegetables on the side (or crackers!).
Crab Cake Mixture:
12 ounces fresh lump crabmeat (or an equal amount of canned lump crabmeat)
2 tablespoons low-fat sour cream
2 1/4 teaspoons oats (regular or quick-cooking)
2 1/4 teaspoons seasoned dry bread crumbs
3/4 teaspoon Dijon mustard
1/2 teaspoon crab boil seasoning (recommended: Old Bay)
1/4 teaspoon dried oregano
Pinch ground black pepper
1/2 teaspoons olive oil
In a large bowl, combine crabmeat, sour cream, oats, bread crumbs, Dijon mustard, crab boil seasoning, oregano, and black pepper. Gently mix ingredients together, being careful not to break up crabmeat.

Baked Artichoke Spinach Dip
Ingredients:
1/2 cup mayonnaise or salad dressing
1/2 cup sour cream
1/2 cup grated parmesan cheese
3/4 cup shredded mozzarella cheese, divided
1 to 2 teaspoons Dijon mustard
dash white pepper
1 can (14 ounces) artichoke hearts, drained and coarsely chopped
1 cup coarsely chopped spinach leaves
1/2 cup finely chopped red onion
Preparation:
In a large bowl, combine mayonnaise, sour cream, parmesan, 1/2 cup of mozzarella, mustard and pepper. Stir in artichoke hearts, spinach and onion. Transfer mixture to a 1-quart casserole dish and cover, chill for at least 3 hours.
Bake at 350 degrees for 30 to 40 minutes or until thoroughly heated. Top with the remaining 1/4 cup of mozzarella. Bake 5 minutes longer or until cheese melts. Serve with bread or crackers.

SPINACH DIP
1 pkg. frozen spinach, thawed & drained
1 pkg. frozen artichokes, chopped
1 sm. can green chilis
1 c. mayonnaise
1/3 cup Parmesan cheese, grated
1 cup Monterey Jack cheese, coarsely grated
2 cloves garlic, minced
Thaw and squeeze excess moisture from spinach using a clean kitchen cloth, cheesecloth, or strainer. Combine all ingredients, reserving 1/4 c. of Monterey Jack Cheese.
Portion spinach mixture into individual bakng dishes or ramekins. Sprinkle reserved 1/4 c. Monterey Jack over tops of each serving.
Bake in preheated 350 degree oven until top is bubbly.
Great served with tortilla chips or vegetable sticks.
Variation: Substitute mozzarella or Muenster cheese for the Monterey Jack.

This is my favorite, and gets good reviews too.
1 pkg frozen chopped spinach, thawed, squeezed well and drained
1 16 oz. container sour cream
1 pkg. Hidden Valley Ranch dressing powder
1 small can of water chestnuts, drained and chopped.
A couple dashes of hot sauce
Stir together the first 3, then stir in the next two. Refrigerate.
It's really easy and really good!

1 cup Sour cream 1/2 Knorr Leek Soup Mix dry
1/2 Hidden Valley Ranch Mix dry
Mix all ingredients together and chill in the fridge to thicken. I usually make this the day before or the morning of.... great with veggies or pretzels.

1 (1 ounce) package dry dill dip mix

1 (8 ounce) loaf round pumpernickel loaf
