I use sourdough bread and make a parmesan crust on the outside, I mix grated parmesan cheese into the butter I spread on the bread. I use provelone cheese (for chewiness) and american (for creamy meltiness!)

When I was 20 years old, I stumbled on a nice method to making a grilled cheese sandwich. 1) Use wholemeal sliced bread or French bread (stick) and cut it in half length-ways. 2) Sprinkle olive oil across the entire piece of bread 3) Use a cheese grater and grate some cheese of your desire all across the bread with 2 layers of cheese. 4) Sprinkle Worcester sauce evenly across the top of the cheese. 5) Sprinkle a small amount of cinnamon powder across the top 6) Use a grill machine or the grill in the oven and cook at low-medium heat, making sure you don't overcook the bread. When you take it out, it will not only taste good but smell good. :-)

I use mayo on the outside of the bread instead of butter- it spreads thinner and lighter and doesn't tear the bread if it is cold. I like to try different cheeses, like Stella brand domestic Kassari. It has a sharp cheddar like consistancy, is a white cheese that is made of cow's milk. Salty and delicious (also good in macncheese). Sometimes I make mine open faced til the cheese melts and add sliced Kalamata olives or capers, or fried onions and mushrooms, lettuce, sliced tomato, bacon or avacado. Then after adding two or three toppings I smash it all together into one big goopy sandwich and eat it with home made lentil soup. Yum.

This is one my dad got me hooked on.
Heat your indoor grill (like a george forman type grill) Butter one side of a piece of bread and place it on the grill. place one piece of american cheese on the bread, spread a little bit of mayonnaise on the cheese, the top with another piece of cheese, then spread a little mayo on the bread. Place on the cheese and spread a little butter on the top of the bread. Close the top of the grill on the bread and wait 2-3 minutes until bread is toasty and brown.

I like to try different breads and fillings along with different cheeses.
My favorite combinations are rosemary bread with mozarella cheese and marinated tomatoes, italian bread with pesto, smoked turkey, mozarella cheese, black olives, artichoke hearts and roasted red peppers.
I use olive oil instead of butter, I just put it directly in the pan and then put the sandwich on top and cook slowly over low heat till browned then flip and do the same with the other side until brown and the cheese is all melty in the middle.

I put light mayo on the bread instead of butter it sounds weird but it is really good then i put slice colby jack cheese and a little shredded cheese too! Sometimes I put a slice of tomato or some ham or turkey just to switch it up!

My favorite is white bread (which I don't normally eat), 2 pieces of American cheese (strategically torn to cover all the bread). Make the sandwich, and then spray the outside of the bread with garlic spray, and cook until brown.
Variations include using a panini press and putting some mayo, stone ground mustard, ham, and spinach on the inside.

Get two slices of your have bread Spread butter across one side of each slice of the bread add any kinda cheese(mozzarella is good) Than add a type of meat (prosciutto is good too) This is called a pini. Grill it up on the grill of fry it up in a skillet. you can get both of these fillers in the Italian section of the store.......Yummy grilled cheese my fave

Mozzarella in a Carriage (Mozzarella in Carozza)
2 pounds fresh buffalo mozzarella, cut into 4 (3 by 4-inch) slices
8 slices American-style sandwich bread, crusts removed
4 eggs
1 cup milk
1 teaspoon chopped fresh thyme leaves
1 teaspoon salt
1 tablespoon plus 3 tablespoons extra-virgin olive oil
1 tablespoon plus 3 tablespoons sweet butter
Divide the 4 pieces of mozzarella on 4 slices of bread. Cover with the 4 remaining slices of bread to form sandwiches. Cut the bread away to leave a 1/4-inch border around the perimeter of the cheese and set aside.
In a wide, shallow bowl, whisk the eggs and add the milk, thyme leaves and salt and mix until well blended. Dip the sandwiches into the egg mixture one by one to coat, and set aside.
In a 12 to 14-inch non-stick saute pan, heat 1 tablespoon of olive oil until smoking. Add 1 tablespoon of butter and cook until the sizzling subsides. Place 2 sandwiches in the pan and cook until golden brown on the first side. Flip each sandwich and cook on the other side. Remove sandwiches and set aside. Repeat the process with the remaining oil, butter and sandwiches. Serve immediately.

MY favorite is putting two pieces of bread with cheese on them under the broiler. i guess its not really grilled cheese, but baked cheese sam?? i dont like all the greasy butter. by thats my fav!
