It really doesn't come up, so it certainly is ethical to not tell someone or to tell them it isn't any of their business. Even if they are assuming the wrong thing.
Now to fool someone into thinking you are, that is certainly a gray area at best. If you tell them that just to respect their religion (like a relative) I might be OK with it. If you are doing it to gain some type of advantage, I wouldn't be.

What is meant by "believe in God."
Do you mean you don't believe he exists?
Do you mean you don't accept His authority?
Do you mean you don't believe He has any authority?
Second:
Saying one thing, but secretly beleiving the opposite is called hypocrisy.
Not an attractive characteristic.
