Like a brick, Some recipes call for frozen product because it would deteriorate in it's shredded or minced form while cooking, hence, frozen product hold there integrity throw the cooking process and are done (at temp) at the end of cooking time

Yes, keep them frozen. It will affect the way the dish cooks (i.e. it effects the temperature) and the amount of water and the way water expands as ice will effect the temperature.

it mean they should be at room temp or in the refrig for 2 days... Not frozen.
