I have seen several recipes for Sausage Balls using Bisquick and Cheese. My question is: Do you prepare the sausage before rolling into balls or do you roll the raw sausage with the cheese and bisquick mix?

You cook the sausage first then mix in with bisquick & cheese.
Easy sausage balls:

preheat oven to 350
Cook sausage in skillet then drain when done

1lb sausage
3 cups bisquick
1/2 lb shredded sharp cheddar

Combine all ing. in bowl (use hands)
Form into 1 inch balls & bake on cookie sheet
@350 for 15 minutes or until brown.

Here's a good recipe. The sausage is left raw while you do the mixing. It gets cooked in the oven.

Sausage Balls

INGREDIENTS
1/2 pound fresh, ground pork sausage
1/2 pound fresh, ground spicy pork sausage
3 ounces processed cheese sauce
2 cups buttermilk biscuit dry mix

DIRECTIONS
Preheat oven to 325 degrees F (165 degrees C).

In a medium-sized bowl, combine regular sausage with spicy sausage, cheese and biscuit mix. Mix well and form into small balls, about 1 to 1 1/2 inches diameter. Place on a cookie sheet. Bake until fully cooked, about 15 minutes.

SAUSAGE BALLS

1 lb. hot sausage
1 lb. mild sausage
12 oz. sharp cheese (softened)
12 oz. mellow cheese (softened)
4 cups Bisquick

Mix all ingredients. Roll into small balls. Place on cookie sheets.
Bake at 400 for 10-15 minutes, or until done (depends upon the size).

Best served warm.


CHEESE & SAUSAGE BALL

2 c. Bisquick
8 oz. mild Cheddar cheese
1 lb. sausage

Mix and roll in balls. Bake at 350 degrees about 15 minutes or until done.

MINI CHEESE BALLS

12-16 oz. sharp cheese
1 lb. sausage
2 1/2 c. Bisquick
1/2 c. water

Brown sausage; drain. While meat is browning, grated cheese; or, if you use shredded cheese, just mix ingredients when meat is done. Roll into small balls. Place on cookie sheet and bake at 400 degrees for 15-20 minutes.

SAUSAGE - CHEESE BALLS

1 lb. Jimmy Dean reg. sausage
4 oz. pkg. shredded cheddar cheese
1 1/2 c. Bisquick

Mix together. Roll into 1 inch balls. Lay on greased cookie sheet with sides. Bake at 350 degrees for 20 to 30 minutes, turn once during baking. Put on paper towel. Serve warm. These may be frozen after cooking and reheated in microwave.

HOT SAUSAGE BALLS

1 lb. hot ground sausage
1 (10 oz.) pkg. cheese, grated
3 c. Bisquick

Mix all ingredients by hand. Roll into small balls - size of a nickel. Freeze on cookie sheets lined with foil. Remove from freezer. Bake 20 minutes in 375 degree preheated oven, or until slightly brown.

2 packages hot/spicy sausage (the bulk packages) 1 1/2 cups Atkins baking mix 4 cups shredded sharp cheddar 1/2 cup jalapeno, finely chopped 1/2 cup onion, finely chopped 1/2 teaspoon garlic powder 1/2 teaspoon chili powder Mix all ingredients thoroughly. Form into 1" balls, and place on non-greased cookie sheet (I'd use one with sides, there's some grease that bakes out). Bake at 375 for 15 minutes, or until golden brown. goood luck!!
