I am having an informal x-mas get together with some friends on Friday and decided to make my infamous ham, which I normally serve as a traditional meal with mashed potatoes, etc.

My new home is small, so I can't do a sit down thing. I work until 2:00 on Friday and people are coming at 7:00.

Any good ideas for easy, not messy (due to the informal service) and complimentary sides, dips or the like?

Salad cups. Roll out slides of white bread until they are 1/8", then cut into a circle with a 4" round cookie cutter. One with a fluted edge makes the cups look pretty. Brush with melted butter and press the circles into a muffin tin to form the "cups." Bake at 300 for 5 or 7 minutes, just until cups are golden brown. Take out the cups and let cool on a wire rack. The good thing about these is that you can make all the "cups" in advance and store them in a plastic bag or Tupperware. On the day of your informal party, fill the cups with the salad of your choice. People pick them up and eat them like little hors d'oeuvres, eliminating the need for salad plates, tongs, etc. My advice is to fill them with caesar salad: roll up your romaine leaves and cut with a very sharp knife into thin strips. toss w/ caesar salad dressing and parmesan. Enjoy, and have fun at your party!

This is great with Prime Rib (or anything else) - Toasted Onion Mashed Potatoes. Mash ten servings of potatoes as per recipe. Cut 3 large onions into 3/4" chunks. Saute Onions in skillet with 2 Tablespoons butter until onions are brown (about 5 minutes). Mix the potatoes and onions together. They are great with or without gravy, or sour cream. People just wolf them down. For spiral cut ham, I cheat and use packaged potatoes au gratin. I usually add one sliced baked potato a little milk and cheese so I can say I made it my own way.

Bake acorn squash with butter and brown sugar. When tender, remove from oven and let set for a while. Then cut into thick slices - keep warm in LOW oven. Then they can serve up a wedge or two.
