CHICKEN PARMESAN
4-6 chicken breasts
3 eggs plus 1 tablespoon water, beaten
1 1/2 cups breadcrumbs plus 1/3 cup grated parmesan cheese
1 jar favorite spaghetti or maranara sauce
Sliced Mozarella cheese

Place each breast between two pieces of saran wrap and pound thin using a meat hammer, rolling pin or a heavy can. Heat two tablespoons of oil in a skillet. Dip breast in the mixture of breadcrumbs and parmesan, into the egg wash and into the breadcrumbs again. Place in skillet and brown on each side, 2 to three minutes. Place in baking dish and cover with maranara sauce. Bake at 350 degrees for 30-45 minutes until chicken is cooked through. Place mozarella slices over breasts. Place under broiler 5-7 minutes until cheese is melted and bubbly and lightly browned.

Chicken
1. Pound a chicken cutlet flat with a meat mallet
2. Dredge the chicken in flour, then egg, then breadcrumbs
3. Fry the chicken in 1/2 inch of oil in a pan - about 2 mins per side depending on the thickness of the cutlet
4. Set aside

Sauce
1. Finely slice ~1/4 of an onion
2. In a saucepan, saute the onion in olive oil until tender (~ 5 mins)
3. Add "some" minced garlic (to taste - generally ~1 tsp) and saute for 30 seconds
4. Add 1 can (15 oz) diced tomatoes and 1 can (8 oz) tomato sauce
5. Bring to simmer, then add spices: 1 Tbs basil, 1 pinch thyme, 1 pinch oregano, salt & pepper
6. Simmer for ~5 mins

Pasta
1. Boil water
2. Cook pasta (read the box). I use spaghetti

Chicken (again)
1. Fire-up the broiler
2. Top the chicken with mozzarella cheese (you can use provolone too)
3. Char the chicken in the broiler until the cheese is dark and bubbly

Plating
1. Chicken on the plate
2. Pasta on the plate
3. Top each with some sauce

Tomato Chicken Parmesan

INGREDIENTS
2 eggs, beaten
1 cup grated Parmesan cheese
7 ounces seasoned bread crumbs
6 skinless, boneless chicken breast halves
1 tablespoon vegetable oil
12 ounces pasta sauce
6 slices Monterey Jack cheese

DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C).
Pour beaten eggs into a shallow dish or bowl. In another shallow dish or bowl, mix together the grated Parmesan cheese and bread crumbs. Dip chicken breasts into beaten egg, then into bread crumb mixture to coat.

In a large skillet, heat oil over medium high heat. Add coated chicken and saute for about 8 to 10 minutes each side, or until chicken is cooked through and juices run clear.

Pour tomato sauce into a lightly greased 9x13 inch baking dish. Add chicken, then place a slice of Monterey Jack cheese over each breast, and bake in the preheated oven for 20 minutes or until cheese is completely melted.

6 boneless, skinless chicken breasts
1/2 cup melted butter
2 cups Italian bread crumbs
2/3 cup Parmesan cheese


Mix Parmesan and bread crumbs. Dip chicken in butter, roll in bread crumbs/cheese mixture. Place chicken in shallow baking pan. Sprinkle with remaining bread crumb/cheese mixture. Bake at 350 degrees about an hour.

1/2 cup Mayonnaise
1/4 cup grated Parmesan cheese
4 boneless, skinless chicken breast halves (about 1-1/4 lbs.)
4 tsp. Italian seasoned dry bread crumbs
Instructions:

1. Preheat oven to 425°.

2. In medium bowl, combine Hellman's ® or Best Foods ® Real Mayonnaise and cheese. On baking sheet, arrange chicken. Evenly top with mayonnaise mixture, then sprinkle with bread crumbs.

3. Bake 20 minutes or until chicken is thoroughly cooked.

Ok..this is not a traditional "chicken parmesean" but it incorporates chicken and parmesean.

Bake chicken breast as per usual in oven.

About halfway through cooking, coat breasts with equal parts, salsa, ranch dressing and parmesean.

Once almost perfect, switch to broil, coat with more parmesean and broil until cheese browns.

SOOOO good. SOOO easy.

My husband calls it "mexican chichen parmesean".
