-Racing-
Thoroughbreds run distance races because they have the ability to go 30-40 miles an hour, and travel distances of up to 1.5-2.0 miles.
Quarter Horses run sprints or short races, because they run the fastest 1/4 mile of any horse, thats why the name 'Quarter Horse.' QH are also used for Barrel Racing, and Western Riding because they have an uncanny cow sense!
Also you have Arabians, you will mainly find those in the European countries, as thats where they are from. Arabians are used in endurance races, and are also used for show, dressage, and the like.
Standardbreds are "Trotters" or "Harness Racers". They only 'trot' or 'pace' and pull sulkie carts. They are very light carts that carry the 'jockey' and instead of starting from a stand still, take off from a run. Standardbreds are also used by the Amish for buggy horses. They are either bought right off the track, or at auction.
-Jumping-
As for jumping, mainly 'Warmbloods" (see above answer). Warmblood includeds Hanoverians, Trakehners, Holsteiners, Oldenburgers, Selle Français, Dutch Warmbloods, Danish Warmbloods, Swedish Warmbloods, Irish Sports Horse, Irish Draught, and that's just a few. For a more extensive look, go to http://en.wikipedia.org/wiki/List_of_horse_breeds
That will give you many different breeds and if you click on them tell you more about that breed, and what they do best!
-Barrel Racing-
Barrel Racing are Quarter Horses, Paints, Quarter-Thoroughbred crosses, Quarter-Arab crosses, Morgans, Tennessee Walking Horses. 90% of the horses that you see on rodeos are AQHA registered Quarter Horses. And they are bred to run! Some people like to use Quarter-Thoroughbred crosses, as they are bred for speed.
It all depends on whatever you are wanting to get involved in, and what breed of horse will be the best for that discipline.
Hope it helps.

Racing - typically Thoroughbreds but Quarter horses also have their own races.
Jumping - Thoroughbreds but mostly warmblood horses these days - Holstieners, Hanoverians, Dutch and Swedish for example.
Barrels - Quarter horse and QH crosses dominate but any smaller (14.1hh to 15hh are typical) athletic horse can barrel race.

the closest Yahoo! solutions has ever come to suggesting the suitable class (whilst it is composed of the horse section) is 'Horse Racing'. UGH! My dream horse would be a dapple gray, 11 3 hundred and sixty 5 days old Hanoverian PSG schoolmaster. Woot.
