This is our favorite holiday cheese ball:
2 pkgs cream cheese
1 12 oz pkg shredded cheddar cheese
1 pkg wafer ham, diced up
1 bundle green onions, chopped up
1 heaping tblsp mayo
Mix all ingredients together, you may have to add more mayo to make it stick together better, form into ball, put into air tight container and then refrigerate overnight and serve with Ritz crackers or whatever you prefer.

The best cheese ball recipe I've ever had doesn't have nuts.
Here it is:

16 ounces (2 pkgs) softened cream cheese

2.5 ounce package of Buddig beef (found in the lunch meat section of the supermarket)

2 tablespoons Lee & Perrins Worcestershire sauce

3 to 4 green onions


The most flavorful way to prepare this, and this is really true, is to put the onions, beef, & worcestershire in a food processor & process well---add softened cream cheese and mix well.

The food processor really brings out the flavors.

If you don't have a food processor, then just finely chop onions & beef and mix everything together & form into a ball. If made this way, it tastes best if made a day ahead and refrigerated overnight to let the flavors infuse the ball.

You can make any cheeseball and roll it in paprika or chili powder or even Ranch dressing or dip mix and they are great. My cheeseball recipe is a stick of butter (not margarine), a package of cream cheese and a half envelope of Ranch dressing mix. Mix all that together and form your ball or log and then roll in paprika.

I've made it for 30 years now.

Dilled Onion Cheese Ball

INgredients

1 8-ounce package cream cheese
4 ounces Gouda cheese, finely shredded (1 cup)
1/4 cup butter
1 tbsp milk
1/2 tsp Worcestershire sauce for chicken
2 tbsp thinly sliced green onion
2 tbsp snipped fresh dill or 2 tsp dried dillweed
1/2 cup chopped toasted almonds
Assorted crackers and/or flatbread

Directions
1.In a large bowl, let cream cheese, shredded cheese, and butter stand at room temperature for 30 minutes. Add milk and Worcestershire sauce. Beat with an electric mixer on medium speed until light and fluffy. Stir in green onion and dill. Cover and chill for 4 to 24 hours.
2. Serve with crackers or flatbread. make 2 cups spread

Spicy Taco cheese ball: prepare as directed in step 1, except substitute finely shredded taco cheese for the gouda cheese, stir in 2 tbsp bottled chopped green jalapeno chile peppers along with the green onion, and omit the dill. Substitute 1/2 cup crushed corn chips for the almonds in step 2.

Prosciutto-basil cheese ball: prepare as directed in step 1, except substitute finely shredded fontina cheese for the gouda cheese; stir in 2 ounces chopped prosciutto and 2 tbsp snipped fresh basil along with the green onion and omit the dill. Substitute chopped toasted pine nuts for the almonds in step 2. if desired, serve with apples, crackers, or flatbread.

I don't know if this is what you are looking for but this is one of my favorites.
Combine 2 packages cream cheese
1/2 lb of ham, finely chopped
1 bunch green onions, finely chopped

Once all ingredients are combined, shape into ball and roll in more chopped ham. Cover, chill, serve with crackers and veggies

*you can also substitute dried beef or cooked crumbled bacon fot the ham.

Use any cheeseball recipe and roll in chopped parsley or paprika instead.

You can make cheese balls with dried fruits instead like cranberries.
