and any ideas what should make at x'mas dinner?? easy to make and tastey. thax

Add 1 teaspoon of dill (fresh, or dried leaf tips), 1 teaspoon of lemon pepper, 1 tablespoon each of finely diced cucumber & spring onion (or garlic chives) to a cup of lite sour cream.
If you want it a little sweeter, you can substitute a quarter of the sour cream with a good mayonnaise (or even Miracle Whip).
Put mixture into a bowl & let guests add their own if they wish.

For the easiest - open a good quality jar of Dill Sauce (normally used for gravadlax).

Try also blending avocado, soured cream or creme fraiche, and lemon juice to taste. Do it at the last minute, or the avocado will discolour. Dill is a good herb to use for salmon.

If the salmon is good quality, it doesnt need much more than perhaps a squeeze of lemon or lime to cut through the richness.

For Christmas dinner I'm making fillet of pork stuffed with apple and wrapped in pancetta, then roasted in white wine. Served with all the trimmings. It's fiddly to put together, but tastes divine!

Salmon Cakes! Here's a really simple recipe. INGREDIENTS 1 (7 ounce) can salmon, drained and flaked, or fresh salmon cooked and flaked 1 egg, beaten 1 tablespoon olive oil 2 green onions, finely chopped 2 cups finely crushed saltine cracker crumbs lemon pepper to taste DIRECTIONS Preheat oven to 375 degrees F (190 degrees C). In a medium bowl, mix together salmon, egg, olive oil, green onions, and 2/3 cup cracker crumbs. Season with lemon pepper. Form mixture into 8 patties. Coat patties with remaining cracker crumbs, and arrange in a single layer on a baking sheet. Bake 10 minutes in the preheated oven, turning once, or until golden brown on both sides.

Try a prepackaged Hollandaise sauce and mix in chopped fresh or dry dill weed.
Or
Gently heat equal parts mayonnaise and sour cream, a little lemon juice, dill weed and parsley flakes (or chopped fresh dill and parsley).
Both can be served chilled or warm.

smoked salmon isnt raw...its rare. and no sauce! Or you can put it on herb buttered pieces of baguete.

You can mix some cream cheese with fresh cream and chopped fresh dill then roll the salmon slices (like below photos and recipes)

I also like to mix mayo + fresh lemon juice + flying fish roe (you can find this small little roe in orange colour in sashimi corner) then top this sauce on smoked salmon slices when serving.
