Couscous (tiny little beads of plump pasta); tagines (stews cooked in cone shaped pots); bisteeya (a three layer pie made of pigeon or cornish hen wrapped in thin sheets of phyllo dough; mechoui (a roasted lamb dish); djej emshel (chicken roasted with olives and lemons); some dishes are made with harissa, a fiery hot paste, some dishes are made with preserved lemons. It's a very tasty cuisine.
