and eat it whole,..there is some kind of brown piece in the inside with little antenna things poking out... does everyone eat that part typically??

mussel is basically made up of shell and muscle. that antenna thingy is like it's "intestine" where all there wastes are stored. i suggest that you'd take it off if you dont want to eat the shell's waste.

p.s. try dipping it in a vinegar... it's really yummy!^_^

Clean them off
Discard any that have a broken shell
Trim the beard
Steam them in white wine or water.

It should take 5-10 minutes tops. You will know they are cooked when the shell opens. Throw away any of those that don't open. Serve and enjoy. It's that simple.

If you are talking about the beard, it is a yellowy-orange thing the mussel uses to attach itself to stuff. That should be removed before you recieve it in a restaurant, or remove it yourself before you cook them. Whatever is inside the opened shell is fine to eat.

Yes, you just take it from the shell after cooking. To prepare them, you need to trim the beard off with a knife or kitchen shears. It is easy. Just cook them the same way as a clam: when they are open, they are ready. Discard any that don't open.

Buy them live. clean off the beards after steaming. Scrape out of the shell just as you would a clam or oyster.

i clean them & cooked them in their shell, when it's cooked the fresh ones will opened up, the meat is easily removed, throw away those that remains closed, they're the bad ones
