My fav easy veg dinner is as follows:
Take one package of firm tofu and mash it up with a fork. Season the mashed up tofu with italian seasonings. Boil some pasta, whatever kind you like, but leave it slightly under done. Mix the pasta with the tofu and add about 10 ounces of tomatoe pasta sauce. Then put all that into a baking dish and cover with veg cheese, cook at 400 degrees until it is bubbly and the cheese is melted.

There are alot of good vegetarian alternatives for dinner, and it depends upon "how vegetarian" you are. Some folks wont eat red meat, but fish and/or chicken is OK, for others they won't even eat animal products so, eggs, milk and cheese are not allowed either. Some good choices are below...
Lentil or other bean soups
Baked Beans
Salad, of course, and there are alot of different types
Curried rice is great
Potatoes au gratin (contains cheese, "if" that's OK)
Scalloped potatoes
Steamed broccoli
Corn chowder (contains milk, if that's OK)
Pasta with tomato sauce (Pasta contains eggs most of the time, but you can get non-egg noodles too)
Tuna or salmon (If fish is OK)
Some of my own favorites...
Sauteed green beans in olive oil with a little mint
Grilled asparagus spears with olive oil and salt & pepper

There are many frozen dinners and meal starters for vegetarians. Check at your local supermarket or specialty store. Also look up Morningstar farms or amy's. These are all good things to use especially when first starting out or just need something fast. There are also many cookbooks that you can get and online recipies on most animal rights websites.

I even have some TVP that I made up and utilising it to make a taco and burrito dinner for myself. shrink up some tomato, lettuce, cilantro, avocado, onion to placed on the tacos. Made some p.c.. de gallo. Made me up some rice - i'm stable to pass. it particularly is extremely helpful to attempt something that straightforward. in case you have no longer have been given the TVP - you need to use refried beans as a substitute (purely no longer my famous) - or use most of the pretend soy meat that would have around the abode that already has the taco flavoring in it.

I had a huge fresh veggie salad(Romaine,Orange Bell Pepper,Radishes,Cukes, Avocado, Alfalfa Sprouts, Grape tomatoes, with LF Raspberry-Walnut dressing) & a small baked red patatoe.. yum

Lets see you could have a salad with a good cheese or a sandwich with whole wheat bread and some tomato and lettuce and cheese. Uh some orange juice to drink. Carrots with butter dill and brown sugar. Also go to http://allrecipes.com/recipes/vegetarian/main.aspx for ideas.
