Nothing in particular (or unique). Every culture seems to have a flat bread form of flour and water mixture. There is the pancake, won ton wrap, crepe, flat bread etc.

I would think everyone wants to make a bread that's quick and easy to make, hence the same, basic food form.

When Spanish conquistadors landed on North America, they discovered the Mexica or Aztec Indians living in the area that we now call Mexico. Corn was a revered plant in Aztec society and was the staple of their diet. Sometimes the corn was eaten raw off the cob, boiled, roasted or made into corn meal. The most traditional way of eating corn was to mash the kernels into a dough to make tortillas. The Spanish brought with them grain and the flour tortillas was born.

Flat breads were made because of the lack of leavening agents available to the cultures who made them. Egyptians were the first to discover the use of yeast to leaven bread. In certain parts of the world, so I've been told, dough left out in the air would collect enough yeast to leaven to a lesser degree. So perhaps what this says about Mexicanos is that perhaps the air is too dry for yeast to survive in abundance, and consequently they developed a very unique and delicious food.
