my kids are getting pickier all the time so it is getting harder to think of healthy diner options.

it seems like they are getting pickier all the time. the only safe meals i know they will like is tacos with ground soy meat, pizza, mac 'n cheese, stirfry with tofu (sometimes!). i'll serve these with a fruit and/or veggie. i'm so bered with these though!

It might help if you are more specific. What will they eat now? What do they like? What don't they like? Etc.

One thing I can think of is buying Morning Star Corn Dogs. They're veggie dogs, and they taste exactly like the real thing. The only down side is they're are rather pricey. I also eat the Garden burgers. I'm just now getting into the Vegetarian scene, first eliminating red meats, and porks. I still eat chicken and fish, but going to try and eliminate that. So sorry, that is all I can think of right now.

Serve Gardenbugers & use Imitation meat crumbles, they taste
just like meat, but they don't have to know,as long as you know they are eating healthy.
Meatless Tacos: Heat & cook 1-2 lbs of Boca or Gardenburger Imitation meat crumbles, season with Taco sesoning mix,
set aside, cut up some tomatoes & lettuce, diced, warm 1 can of Rosarita No-fat refried beans,seson to taste, use Taco shells,
puttting a layer of beans , then the imitation meat, then the diced tomatoes & lettuce, top with fat-free sour cream or guacamole.
Serves 4-8.

Potato pizzas....They ahve a recipe at vegetariantimes.com I thin k, it's a potato s kin that you mash up the potato part, and add your fave pizza ingredients to (the sauce, veggies, cheese) and then ba ke the sin li ke normally for potato s kins and then fill with the mashed potato pizza.... kraft family food boo ks have a lot of easy kid friendly recipes, go to their website and a lot of them are easy to omit the meat if they have meat at all!! try morningstar farms veggie crumbles and mae some tacos or other tasty kid approved meals!

Vegetarian sloppy joes, made by fantastic foods. just add a can of tomato paste and boil the ingredients for 5 minutes and it's ready. So easy, and very tasty.

Veg fritters - cut vegetables into flattish chunks, dip them in batter and deep fry. You can steam them a bit ( especially cauliflower and potato ) before the batter dip.
Soya nuggets soaked in water, drained and then cooked in brown sauce or tossed in soya garlic sauce tates like chicken. Try it.

french fries.. Look it up online for vegetarian recipes.. that how i learn.. Cook them different culture food (if you try it.. because there a lot of vegetarian food out there and you can make vegtarian meatball or go buy a vegetarian book.. i have few of that.. because i like veg and my husband love to eat veg but we do eat chicken and fish.... so search online or go to book store and get few books..and or you can make mushroom that my favor..and tofu if you up for that.. and that soy...
