pizza and muffins sounds a little messy to be eating while playing risk to me. Although, if you make mini pizzas on english muffins everyone will be able to eat with one hand. You could mix it up a little as well, there are so many things that you can put on english muffins. Vegetable trays are always a hit. You can even get those premade and any local grocer. One of my favorite dips it taco dip. The way that i make it is: 8oz cream cheese 8oz sour cream 1 package of taco seasoning mix then anything that you would normally put on a taco. Then maybe just a plate of assorted cookies. I think that you will make everyone happy with these items.

make a cheese & sausage plate, slice 3-4 different cheeses and a roll of summer sausage & serve with crackers.
These crackers are great:
2 12 oz bags oyster crackers, pour in a large bowl & set aside. Mix 1 c oil, 1 T garlic powder, 2 T dill weed & 1 envelope ranch dressing mix. Whisk together, pour over crackers & stir til coated. They'll LOVE them!
Melt equal amounts of processed cheese (velveeta) with either canned chili or salsa, dip with tortilla chips.
Spread thin ham slices with cream cheese, roll a pickle up in it, slice & secure with toothpicks.

What about sunchips? They aren't too bad for your health. Just don't get anything that's really really salty. Not only does it feel like you are eating pure salt, you are eating pure salt and oil. Most commercial chips are soaked thoroughly in oil. Just try drier chips, like Doritos. Of course, you might just try stuff like those Snack packs, with those peel back lids and the cheese dip with pretzel sticks. In fact, try mini pretzels. They are good too. Just something not made from oil-fried oil with a pound of salt in each chip.

If you have and M&M Meat Shop near you they have TONS of great finger foods to choose from. My current favourite are the pinwheel tortilla wraps. YUMMY!!! Of course you could always make them yourself with soft tortilla shells wraps, cream cheese, cheddar cheese, ham or turkey or whatever filling you want really, that's not too messy.

THE MUFFULETTA SANDWICH. Google this, get some ideas then tailor it to your own tastes. After I made this a few times for card games people actually paid me to prepare them for events of their own.
