My family is not vegetarian, but my sister-in-law, who is visiting, does not eat meat. So I asked her what she liked and she said spinach lasagna. I asked my husband how to make it and he just said instead of meat add spinach. Well duh, lol, but do I add the spinach into the toamto sauce, or do I layer it on the cheese. I just want to know how to layer this lasagna? Thanks for any help.

She does eat cheese and milk and such, in fact when we went to dinner she ate fish. She just won't eat beef, chicken or pork. So I am good with the cheese and such. Thanks everyone for all your input.

I love the taste of spinach lasagna and have made it myself. Do not put the spinach into the tomato sauce nor layer it on the cheese. First layer the noodles then sprinkle the spinach on the noodles then sprinkle the cheese on the spinach, then pour some tomato sauce on top. I always make three (3) layers of spinach lasagna. So depending on how many layers you want always repeat the same process for each layer. Good Luck and buen appetite.

This is a veggie lasagna that has a great flavor and is perfect for a vegetarian diet. I'm sure you all would like it.
Roasted Red Pepper Lasagna
Ingredients
Nonstick cooking spray
2 cups red pasta sauce
6 no-boil lasagna noodles
1/2 of a 15-oz.container ricotta cheese
6 oz. goat cheese or shredded mozarella cheese ( 1-1/2 cups)
1 Tbsp. Chianti or other red wine (optional)
1/4 cup finely shredded Parmesan cheese
1 cup roasted red sweet peppers, drained well and cut into strips
Directions
1. Preheat oven to 350 degrees F. Lightly coat a 2-quart square baking dish with cooking spray. Spoon 1/3 cup of the sauce in the dish. Top with 2 lasagna noodles. In a small bowl stir together the ricotta cheese, 1 cup of the goat cheese, and, if desired, the Chianti. Spoon half the mixture over the noodles in the dish. Sprinkle with 2 tablespoons Parmesan. Top with half the red pepper strips. Spoon half the remaining sauce on the pepper layer.
2. Top with 2 more noodles, the remaining ricotta mixture, and remaining peppers. Add 2 more noodles and the remaining sauce. Dot top with remaining goat cheese and sprinkle with remaining Parmesan.
3. Cover with foil. Bake for 50 minutes. Let stand, covered, on a wire rack for 20 minutes before serving. Makes 4 to 6 servings

I would add other veg even if you are making it mainly spinache. Fry some onion in oilive oil til soft add some garlic and black pepper oregano and any other herbs you have as veg lasange can be bland. Chop up a small bag of frozen veg add to the pan and heat, then add the frozen or fresh spinache. Make some cheese sauce. Open a tin of tomato sauce and pour some on the bottom of a lasange pan, place layer of lasange no cook, add the veg and some cheese on top add pasta and more v eg top with any tomato sauce you have and end up with a plain layer of lasange and add the last of the cheese sauce. If youare short jsut pour on some tomato sauce., if you have any cheese over put on top Stick it in a hot oven

You need to find out how strict a vegetarian she is...some won't even eat eggs or milk products like cheese. If she is one of those then you might want to look into soy products too. If she's ok with cheese, then I'd chop the spinach, mix it into the ricotta cheese, and layer it as you normally would. If you want to add tasty protein content, add in tofu cubes patted dry and sprinkled with a bit of salt to the tomato sauce, or better yet, zucchini and/or mushrooms layered in!

You can use layers of spinach- steam, and top with mozarella and grated parmesan before pouring a small ammmount of bechamel sauce- but I think baked vegetables are much more delicious as a replacement to meat. You cut courgettes, eggplants, onion, green pepper, red pepper into cubes (large cubes) or slices and place under a hot grill till lightly charred. Then make a bechamel sauce (a light white cheese sauce). In a baking dish, layer lasagne, grilled veg, grated cheese, bechamel, lasagne etc. Top with a small ammount of white saucwe, sprinkle with cheese, bake for 45 mins at around 200 C and voila!!!

I add a separate layer. That way it's prettier. You'll have the red sauce layer, the white cheese, and the green spinach. Just like christmas.

Instead of spinach I love adding broccoli, culiflower and zucini instead of the meat. Just layer it exactly like you would do so with meat. I also add ricotta and mozerella cheese and it's really good!

You can do it either way, but I recommend mixing the spinach into the sauce so it's easier to cook. Kudos to you for making her a vegetarian meal! You're the best!
