does anyone out there know how to make spicy kani salad? Its with crab and cucumber but i can't figure out the sauce. I've googled it so that won't answer my question. i've also asked the waiter at the japanese restaurant but i don't think he understood what i was asking.

arrange your lettuce on a plate, add some shredded kani (crab meat), cucumber (cut into thin strips) and ripe mango. For the dressing mix some japanese mayonaise with a bit of mustard for color and to add some flavor. you may add some sugar if you want but the mango is sweet enough if you dont want it too sweet. enjoy

Japanese Mayonnaise Sauce
2 cups mayonnaise
6 1/2 fluid ounces water
1 1/2 tablespoons ketchup
2 tablespoons sugar
1 dash hot pepper sauce
2 teaspoons garlic powder
3/4 teaspoon paprika
1/4 teaspoon white pepper
1/4 teaspoon black pepper
1 pinch salt

DIRECTIONS:
In a blender or food processor, combine mayonnaise, water, ketchup,
sugar, and hot pepper sauce. Season with garlic powder, paprika,
white pepper, and black pepper, and salt. Blend until smooth

I use sweet rice vinegar, a little sesame oil, add a small amount of hot pepper sauce or take small red peppers and slice very thin. Some add a little soy sauce or lemon juice. I just do it until I find a taste that I like. I use this for baby octopus salad. If I have sesame seeds I sprinkle them on top of the salad. Best of luck to you and Merry Christmas!!
