I have been to the pho bang restaurant in china town, nyc, vietnamese cuisine, delicious. If you can go you should. And the soup is unbelievably good. I had it first when I had a vietnamese roomate, she'd cook and the soup was a staple for us all. I like mine with Tuong ot Sriracha hot sauce. MMMMMMMMMM De-yummy!

The noodles are rice noodles and they should be available in large grocery stores. As for the beef... usually the tendons, and fatty cuts or flank cuts are used but anything could be used, I suppose, as long as you cut it thinly enough. If you know of a butcher nearby, he may be able to cut the beef thinly for you if you don't know how. I know there's tripe (stomach) in it as well... along with fresh lime, scallions, cilantro, various onions, bean sprouts, fish sauce, a variety of spices (ginger, basil, pepper, fresh mint), chile peppers, and the stock is usually made from boiling ox tail or beef bones. I suppose a chicken stock could be made too. Just be careful of buying pre-made stocks or broths as they usually contain MSG. If you're in the mood and love to cook, it would be really fun to make it all yourself. Of course, start with making the stock/broth first, add the spices and sauces, onions and beef, then the bean sprouts and other fresh veggies. It doesn't need to cook for long like a traditional soup does... just simmer for a few minutes and serve hot, garnish and season to taste! Good luck. :)

Ask 80 million Vietnamese.
There are different types depending on the meat and soup base.
I only eat /drink vegetarian but I have had several variations. Regional differences will also give different tastes.
Remember, with any food, it is often the cooks ability that makes iit taste so great.

I love it! Esp. when they bring the basil and mint and bean sprouts to add to it. I will add the peppers to it for spice, but I dont' eat them, just let them flavor the broth.
