I know this isn't a balanced diet especially since she works out 4 times a week and only does cardio. How can I explain to her that she needs other foods in her diet, such as a website?
She has tea and a banana/apple for breakfast, snacks on baby carrots and an apple all day, and has a bowl of Special K for dinner.
Oh, she is also very tired throughout the day even though she gets 7hrs of sleep and must take a nap to avoid feeling sick.

It does sound like she has issues with food, and perhaps using the label vegetarian as an excuse. She should be eating healthy meals with protein such as lentils, grains, beans, nuts, seeds, soya products. She is tired as she isn't getting enough iron in her diet. Can you talk to her parents about your concerns or persuade her to see a doctor? She will make herself seriously ill if she carries on like this, especially if she's exercising so vigorously. She needs some help asap.

That is an especially horrible way to eat. First of all your body needs meat. One reason is that only animal products contain vitamin B12. Once you get a B12 deficiency you can get nervous system disorders and have severe problems moving around. You also need animal products for its complete protein. There's no way around this.
Special K is a processed cereal. No cereals are healthy and special K is especially toxic. It's loaded with artificial synthetic vitamins. The cereal is highly heated and loaded with carcinogens. Very bad for you.
Eating carrots and apples all day is too much sugar, even though it's natural sugar. This is very bad on the bones and teeth. I'm sure her teeth will start to rot and she will get more cavities.
If she continues that toxic diet she will most definitely suffer greatly as time goes by.

She needs more carbohaydrates and protien in her body!
Make a bean and rice dish for dinner one night,stock peanut butter in the house, get her some protien bars, tell her that being a vegan and eating all thing with animal prouducts is great, support her, but tell her you cna't just eat tea and carrorts and a apple, she need a balanced vegan diet.
Ask her what type of vergitarian she is, hope that shes a lacto-ovo-veagitaian, because they eat eggs,and have dairy products, and some even eat fish accasionaly.

It sounds like she is starving herself. Does she have body-image issues? Is she calling herself vegetarian for health reasons, or for ethical ones?

I would recommend perhaps cooking some light vegetarian meals, and offering to share with her. Keep the fat content low, and the recipes simple, and she may find she likes it. A website with some tasty recipes is www.fatfree.com.

Being tired all the time is a sign of lack of protein and iron in her diet - both of which can be supplemented using vegetarian/vegan foods.

A lot of anorexics start out using vegetarianism as an excuse. You should talk to her about it. Have you heard of "exercise anorexia?" People who eat very little and then work off everything they've eaten and more. Sounds like your roommate. If she's going to the campus gym, talk to one of the trainers.

You are not going to be able to convince her that her diet is unhealthy. If feeling tired all the time and requiring naps is not enough to convince her, there is nothing you can say that will. The only thing you can do is to lead by example and leave nutritional literature for her to read. Eventually, she will get tired of feeling tired.

Some people use "I'm a vegetarian" to hide the fact that they have an eating disorder. Not to say that everyone who eats unhealthy and claims to be veg has an Eating Disorder...

Sounds like one of those anorexic dieters who's vegetarian just to slim down. Tell her to eat some goddamned beans and nuts. No one is going to survive without beans and nuts for the protein and iron they provide.

Slip some bacon into her salad and make her a real hamburger but tell her that it's a Boca burger... Also explain to her that animals die every day so that people can eat them so if she doesn't it's disrespectful towards the animals.

I would talk to her about it and tell her that you are worried about her. She can still be a vegetarian and eat a lot of types of foods and stay healthy. She seems to be trying to starve herself.
