What is a good recipe for vegan vanilla frosting?

You should get "Vegan Cupcakes Take Over the World" by Isa Chandra Moskowitz and Terry Hope Romero. It rules. Isa also wrote "Vegan with a Vengeance", the best Vegan cookbook ever to exist.

Here is vegan frosting recipe from that book:

VEGAN FLUFFY BUTTERCREAM FROSTING (VANILLA)

1/2 C non-hydrogenated shortening
1/2 C non-hydrogenated margarine (like Earth Balance)
3 1/2 C powdered sugar, sifted if clumpy
1 1/2 tsp vanilla extract
1/4 C plain soymilk or soy creamer (I use vanilla flavor to give it more punch!)

Beat the shortening and margarine together until well combined and fluffy. Add the sugar and beat for about 3 more minutes. Add the vanilla and soymilk, beat for another 5 to 7 minutes until fluffy.

SaraJane gave you a good recipe - that book comes highly recommended from me too! (I just made some more cupcakes from the book today).

You can always just use a regular frosting recipe and use Earth Balance instead of butter :)

There are ways. My best friend's mom used to make the BEST froting for cookies and cakes. In my opinion, it was even better than real frosting.

Actually, I've found that many of the popular store brands happen to be vegan....they really do taste better and make it a LOT easier!
