According to the Australians, the chef of the Hotel Esplanade in Perth, Western Australia, Herbert Sachse, created the pavlova to celebrate the visit of the great Russian ballerina, Anna Pavlova. According to the New Zealanders, a recipe was recorded in 1919, long before the ballerina came to dance. We love controversy and always invite your opinions

The dancer Pavlova came to dance in Australia. After her performance she went out to a restaurant to eat. When looking over the dessert menu she couldn't find anything she liked so called the head chef over and described to him what she would like . He went off and produced the Pavlova.
Chefs in this country try to add more ingredients than necessary, but the basic pavlova is perfect there is nothing that is needed to be added.
The perfect pavlova is a slightly creamy colour, crisp base with a almost marshmallow inside bit. Covered in cream, strawberries, kiwi and passion fruit. That's it.
